- 1/4 cup toasted sunflower seeds or croutons (optional)
For Dressing (optional)
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar or lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper, to taste
Directions
- Prepare the Salad
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
- Make the Dressing (is using)
- In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper until well emulsified.
