Hearty Perfect Green Salad

This perfect green salad combines fresh mixed greens, juicy cherry tomatoes, crisp cucumber, shredded carrots, other seasonal vegetables, and is topped with crumbled cheese and toasted sunflower seeds. Ingredients

For Salad

  • 6 cups mixed greens (romaine, arugula, spinach, romaine or a combination)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced (optional)
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 2 slices bell pepper diced (optional)
  • 1/4 celery stalk diced (optional)
  • 1 -2 radishes slice thin (optional)
  • 1/4 cup crumbled feta cheese or shaved Parmesan (optional)
  • 1/4 cup toasted sunflower seeds or croutons (optional)

For Dressing (optional)

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste

Directions

  1. Prepare the Salad
    • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  2. Make the Dressing (is using)
    • In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper until well emulsified.
  3. Assemble (and toss with dressing if using)
    • Drizzle the dressing over the salad ingredients. Toss gently to coat.
  4. Add Toppings
    • Sprinkle the salad with crumbled feta cheese (or shaved Parmesan) and toasted sunflower seeds (or croutons) for added texture and flavor.
  5. Serve
