The optional sandwich version transforms this dish into a hearty, satisfying meal with fresh toppings like lettuce, tomato, and maybe a little avocado. For a complete dining experience, serve the walleye as a sandwich with a side of tangy tartar sauce, enhancing the fish’s flavor. Ingredients

  • 4 walleye fillets (6 oz each), skinless
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chives, rosemary, or tarragon, chopped
  • lemon wedges for garnish

Directions

  1. Prep the Fish: Pat the walleye fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat the Pan: Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Cook the Fish: Add fillets to the skillet, skin-side down if applicable. Cook for 3-4 minutes per side, or until golden brown and cooked through. Add minced garlic in the last minute of cooking.
  4. Finish and Serve: Remove fish from the pan. Garnish with lemon slices and fresh herb of choice.

Sandwich Option

Ingredients
  • 4 buns or rolls
  • 4 tbsp tartar sauce, mayonnaise or Greek yogurt
  • 1 cup shredded lettuce
  • 1/2 red onion, sliced (4-6 slices)
  • 1 tomato, sliced
  • 1 avocado, sliced (optional)
Directions
  1. Prepare the Buns: Toast the buns if desired.
  2. Assemble the Sandwiches: Spread tartar sauce or mayonnaise or Greek yogurt on the buns. Place a walleye fillet on each bun. Top with shredded lettuce, red onion slice(s), tomato slice(s), and if using avocado slices.
  3. Serve: Close the sandwiches and serve with your side(s) of choice.
