Hearty cheesy vegetable quesadillas recipe

These Cheesy Vegetable Quesadillas are a flavorful and satisfying dish perfect for any meal. The combination of melted cheese and a mix of seasoned vegetables like bell peppers, zucchini, corn, and black beans creates a delicious balance of textures and tastes. Ingredient

  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 zucchini, diced (or yellow squash, diced)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until they start to soften.
  2. Add the zucchini, black beans, and corn to the skillet. Season with cumin, chili powder, salt, and pepper. Cook until the vegetables are tender.
  3. Remove the vegetable mixture from heat.
  4. Place one tortilla in a large, dry skillet, griddle, or grill press over medium heat. Sprinkle with 1/4 cup of shredded cheese, then add a portion of the vegetable mixture.
  5. Top with another 1/4 cup of cheese and place a second tortilla on top. Cook until the bottom tortilla is golden brown and the cheese starts to melt, about 2-3 minutes.
  6. Carefully flip the quesadilla and cook the other side until golden brown and the cheese is fully melted.
  7. Remove from the skillet, griddle, or grill press and cut into wedges. Repeat with the remaining tortillas and filling.
  8. Serve hot with your favorite toppings like salsa, sour cream, guacamole, and chopped cilantro.
