This chicken curry is a rich and aromatic dish, featuring tender chicken thighs simmered in a flavorful blend of garlic, ginger, curry powder, cumin, coriander, and coconut milk. Ingredients

  • 2 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons vegetable oil

  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 cinnamon stick
  • 1 tablespoon tomato paste
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice, for serving
  • Naan bread, for serving

Directions

  1. Prepare the Chicken
    • Season the chicken pieces with salt and pepper.
  2. Cook the Aromatics
    • Heat the vegetable oil in a large pot or Dutch oven over medium heat.
    • Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes.
    • Add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  3. Add Spices and Tomatoes
    • Stir in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper (if using). Cook the spices for 1-2 minutes to release their flavors.
    • Add the diced tomatoes (with their juices) and tomato paste, stirring well to combine.
