Hearty marjoram roasted chicken

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh marjoram leaves, chopped (or 2 teaspoons dried marjoram)
  • 4 cloves garlic, minced
  • 1 lemon, quartered
  • 1 onion, quartered
  • 1 tablespoon fresh rosemary (optional)
  • Salt and pepper to taste
  • 1 cup chicken broth

Directions

  1. Preheat the Oven
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken
    • Remove any giblets from the chicken and pat it dry with paper towels. Place it in a roasting pan.
  3. Season the Chicken
    • In a small bowl, combine the olive oil, chopped marjoram, minced garlic, salt, and pepper.
    • Rub the mixture all over the chicken, including under the skin where possible. Stuff the lemon quarters and onion into the cavity of the chicken. Add rosemary if using.
  4. Roast the Chicken
    • Pour the chicken broth into the bottom of the roasting pan to keep the chicken moist.
    • Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown. Baste occasionally with the pan juices.
  5. Rest and Serve
    • Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute.
    • Serve the chicken with the pan juices drizzled over it, alongside your favorite vegetables or roasted potatoes.
