Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snap peas, trimmed
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Cooked jasmine rice or rice noodles, for serving
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Directions

  1. Cook the Chicken
    • Heat the sesame oil in a large skillet or wok over medium-high heat.
    • Add the sliced chicken breasts and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  2. Prepare the Vegetables
    • In the same skillet, add the sliced red and yellow bell peppers and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
