Ingredients

  • 1 lb (450g) chicken breast, sliced into thin strips
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 3/4 cup heavy whipping cream (or coconut milk for a dairy-free version)
  • 3/4 cup grated Parmesan cheese (optional for a cheesy twist)
  • 2 cups fresh spinach
  • Fresh basil, for garnish (optional)

Directions

  1. Cook the Pasta: Boil pasta in salted water according to package directions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken strips with salt and pepper. Add to the skillet and cook for about 5-7 minutes, until golden and cooked through. Remove and set aside.
  3. Sauté Garlic: In the same skillet, add a bit more oil if needed. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add Pesto and Cream: Stir in the sun-dried tomato pesto and cream, cooking for about 2 minutes until well combined and slightly thickened.
  5. Combine Ingredients: Add the cooked pasta, chicken, and spinach to the skillet, stirring to coat everything in the sauce. If it’s too thick, add a splash of pasta water until you reach your desired consistency.
  6. Add Cheese and Serve: Stir in the Parmesan cheese if using, and let it melt. Garnish with fresh basil, if desired, and serve warm.
