Hearty pan-seared scallops

Golden seared scallops with garlic lemon butter.

These pan-seared scallops are a quick and elegant dish. The scallops are seasoned with salt and pepper, then seared in olive oil until golden brown. Butter and garlic are added for a rich flavor, and a splash of lemon juice brightens the dish. This recipe is perfect for a special dinner or a quick weeknight meal.

For a complete meal, serve the scallops with a side of creamy risotto or garlic mashed potatoes. A fresh green salad or roasted asparagus complements the rich flavors. Pair with a crisp white wine like Sauvignon Blanc or Chardonnay for a delightful dining experience.

Ingredients

  • 1 pound sea scallops
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (optional)

Directions

  1. Prepare the Scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper.
  2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.
  3. Sear the Scallops: Place the scallops in the pan in a single layer. Sear without moving them for about 2-3 minutes until a golden crust forms. Flip and sear the other side for another 2-3 minutes.
  4. Add Butter and Garlic: Reduce the heat to medium. Add the butter and garlic to the pan. Baste the scallops with the melted butter and garlic for about 1 minute.
  5. Finish with Lemon Juice: Remove the pan from heat and add the lemon juice. Give the scallops a quick toss in the sauce.
  6. Serve: Garnish with fresh parsley if desired and serve immediately
