Hearty banana pudding

A glass bowl filled with layered dessert, featuring vanilla custard, sponge cake, and topped with generous whipped cream and a sprinkle of cinnamon.

Banana pudding is a beloved dessert that earns its irresistible appeal through layers of contrasting textures and complementary flavors. Ripe bananas bring natural sweetness and a creamy, almost buttery richness that deepens as they meld with the silky vanilla custard. Nilla wafers soften into tender, cake-like layers that absorb the pudding without losing their structure. The whipped topping adds an airy lightness that balances the density of the custard. Together, these simple ingredients create something far greater than their parts. Serve it chilled in a trifle bowl for a showstopper presentation, or in individual mason jars for elegant single servings at gatherings.

Ingredients

Pudding

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 3 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons pure vanilla extract

Layers

  • 1 box (11 oz) Nilla wafers (mini ones are great if available)
  • 5 to 6 ripe bananas, sliced into 1/4-inch rounds

Topping

  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Whisk together the sugar, flour, and salt in a medium saucepan over medium heat.
  2. Gradually stir in the milk, whisking constantly until the mixture is smooth and combined.
  3. Cook over medium heat, stirring frequently, until the mixture begins to thicken and just starts to bubble, about 10 to 12 minutes.
  4. Temper the egg yolks by slowly adding about 1/2 cup of the hot mixture into the yolks while whisking rapidly.
  5. Pour the tempered yolk mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
  6. Remove from heat and stir in the butter and vanilla extract until fully incorporated.
  7. Let the custard cool for 15 to 20 minutes, stirring occasionally to prevent a skin from forming.
  8. Beat the heavy whipping cream, powdered sugar, and vanilla in a chilled bowl until stiff peaks form.
  9. In a large trifle dish or 9×13 baking dish, arrange a single layer of Nilla wafers across the bottom.
  10. Add a layer of sliced bananas over the wafers.
  11. Pour or spoon a generous layer of custard over the bananas.
  12. Repeat the layers until all ingredients are used, ending with custard on top.
  13. Spread the whipped cream over the top layer of custard.
  14. Garnish with crushed Nilla wafers or a few banana slices if desired.
  15. Cover and refrigerate for at least 4 hours, or overnight for best results.

Tips and variations

  • Use very ripe bananas for the most intense banana flavor and natural sweetness
  • For a shortcut version, substitute the homemade custard with two boxes of instant vanilla pudding made with whole milk
  • Cream cheese variation: fold 8 oz of softened cream cheese into the cooled custard for a richer, tangier flavor
  • Caramel banana version: drizzle salted caramel between layers for a decadent twist
  • Peanut butter version: swirl 1/4 cup of creamy peanut butter into the warm custard before layering
  • Chocolate version: substitute chocolate wafers for Nilla wafers and add a layer of chocolate ganache
  • Store covered in the refrigerator for up to 3 days, though it is best enjoyed within the first 2 days before the bananas darken
  • To slow banana browning, lightly brush banana slices with lemon juice before layering
  • Individual mason jar servings are ideal for parties and potlucks and travel well when lidded
