Yellow squash becomes something truly special when baked into a casserole. The natural sweetness of the squash deepens as it roasts, while a rich blend of sour cream, cream cheese, and sharp cheddar creates a luscious, velvety interior. Sautéed onion and garlic add savory depth, and a buttery cracker crumb topping delivers the perfect golden crunch against the creamy filling. This dish is comfort food at its finest, striking a beautiful balance between tender vegetable and indulgent richness. It pairs beautifully with grilled chicken, pork tenderloin, or a simple green salad, and works equally well as a summer side or a light vegetarian main.
Ingredients
For the casserole
- 4 medium yellow squash, sliced into ¼-inch rounds (about 5 to 6 cups)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 4 oz cream cheese, softened
- ½ cup sour cream
- 1 cup sharp cheddar cheese, shredded, divided
- 2 large eggs, beaten
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Pinch of cayenne (optional)
For the topping
- 1 cup buttery crackers (such as Ritz), crushed
- 2 tablespoons butter, melted
- ¼ cup sharp cheddar cheese, shredded
Directions
- Preheat your oven to 350°F. Lightly grease a 9×13-inch or equivalent baking dish and set aside.
- Place sliced squash in a large skillet or saucepan with a splash of water. Cook over medium heat for 5 to 7 minutes until just tender. Drain thoroughly in a colander, pressing gently to remove excess moisture. This step is critical for a creamy, not watery, casserole.
- In the same skillet, melt 2 tablespoons butter over medium heat. Sauté the diced onion for 4 to 5 minutes until softened and translucent. Add the garlic and cook another 1 minute. Remove from heat.
- In a large mixing bowl, combine the softened cream cheese and sour cream, stirring until smooth. Add the beaten eggs, ¾ cup of the shredded cheddar, salt, pepper, garlic powder, onion powder, and cayenne if using. Mix well.
- Fold the drained squash and the sautéed onion and garlic into the cream cheese mixture until evenly combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a small bowl, combine the crushed crackers, melted butter, and remaining ¼ cup cheddar. Stir to coat. Sprinkle evenly over the top of the casserole.
- Bake uncovered for 30 to 35 minutes, until the top is golden brown and the casserole is set and bubbling at the edges.
- Let rest for 10 minutes before serving.
Tips and variations
- Draining the squash well is the single most important step. If the squash is too wet, the casserole will be loose and watery. You can even pat the slices dry with paper towels after draining.
- For extra depth, roast the squash slices at 400°F for 15 minutes before adding them to the filling instead of steaming.
- Add ½ cup diced green chiles or jalapeño for a subtle kick.
- Swap the crackers for panko breadcrumbs tossed with butter and Parmesan for a lighter, crispier topping.
- Stir in ½ cup cooked, crumbled bacon for a smoky, savory twist.
- Gruyère or Monterey Jack can substitute for or be blended with the cheddar for a more complex flavor.
- This casserole can be assembled a day ahead, refrigerated unbaked, and then baked fresh. Add 5 to 10 minutes to the bake time if going straight from the refrigerator.
- Leftovers reheat beautifully in the oven at 325°F for about 15 minutes.
