Bulk batch (makes about 1/2 cup, store in a jar)
- 3 tablespoons chili powder
- 1 1/2 tablespoons cumin

- 1 1/2 teaspoons dried oregano, optional but recommended

Directions
- Measure all spices into a small bowl.
- Whisk or stir together until fully combined and evenly blended.
- Transfer to a small airtight jar or spice container.
- Label with the date and store in a cool, dark place.
To use
- Brown your protein or vegetables in a skillet.
- Add 2 to 3 tablespoons of seasoning per pound of protein.
- Pour in 1/4 cup of water, stir to coat, and simmer 3 to 5 minutes until the liquid reduces and the seasoning clings.
Tips and variations
- For mild heat, reduce or omit the red pepper flakes entirely.
- For extra smokiness, use chipotle chili powder in place of regular chili powder.
- For a deeper, earthier flavor, lightly toast the cumin in a dry pan before mixing.
