Delightful and crunchy slaw salad.

This salad is a delightful and crunchy mix featuring ramen noodles, crisp vegetables, and a flavorful dressing. I usually make my own coleslaw mix versus buying a bag but either way just make sure you have enough coleslaw mix. I prefer the sunflower seeds to the sesame seeds. You can toast the seeds in a skillet for a few minutes on medium for added flavor if you have the time.
Ingredients
For the salad
- 1 package (about 16 ounces) coleslaw mix (shredded cabbage and carrots) (or make your own)
- 2 packages ramen noodles, crushed (discard seasoning packets)
- 1/3 cup red bell pepper, thinly sliced (optional)
- 1/2 cup snow peas, thinly sliced (optional)
- 5 – 6 stalks sliced green onions
- 1/4 cup chopped cilantro (optional)
- 1 cup sliced almonds
- 1 cup sunflower seeds or sesame seeds
For the dressing
- 1/4 cup white vinegar
- 1/4 cup water
- 3/4 cup sesame oil (or other vegetable oil)
- 2 tablespoons honey or 1/2 cup of granulated sugar
- 1 teaspoon fresh ginger, minced (optional)
- 1 cloves garlic, minced (optional)
- 1/4 teaspoon soy sauce (optional)
Directions
- Prepare the dressing
- In a small bowl, whisk together the dressing. Set aside.
- Prepare the noodles
- Crush the ramen noodles into small pieces. You can do this by placing the noodles in a plastic bag and gently crushing them with a rolling pin.
- Assemble the salad
- In a large bowl, combine the coleslaw mix, crushed ramen noodles, sliced snow peas (if using), sliced red bell pepper if using), green onions, cilantro (if using), almonds, and sunflower or sesame seeds.
- Toss with dressing
- Pour the dressing over the salad and toss until everything is well coated.
- Chill and Serve
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
- Garnish (optional)
- Garnish with additional sliced green onions, cilantro, or toasted sesame seeds before serving.
