Ingredients
- 8-10 medium ripe tomatoes, diced (about 4 cups)
- 2 small red onions, finely chopped
- 2-4 jalapeño peppers, seeded and finely minced (adjust for heat preference)
- 1/4 cup fresh cilantro, chopped
- 4 cloves garlic, minced
- 2 medium bell peppers, diced (any color)
- Juice of 2 limes
- Salt and pepper, to taste
- Optional: 1 teaspoon ground cumin, 1 teaspoon sugar (if tomatoes are very acidic), 1 teaspoon olive oil
- Extras: chopped parsley, green onion, or chives for topping at time of serving
Instructions
- Prep the veggies
Dice tomatoes and bell peppers, finely chop onions, mince jalapeños, and chop cilantro. - Combine ingredients
In a large bowl, mix together tomatoes, onion, jalapeño, bell pepper, cilantro, and garlic. - Add lime and seasoning
Squeeze in lime juice. Add salt, pepper, and optional cumin or sugar. Mix well. - Mix and rest
Cover and refrigerate for at least 30 minutes to let flavors meld. - Serve
Enjoy with chips, tacos, grilled meats, or as a fresh topping
