For the Filling
- 4 large flour tortillas (burrito-sized)
- 6 large eggs
- 1/4 cup milk or cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp unsalted butter or oil
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 lb breakfast sausage (or bacon, diced ham, or chorizo)
- 2 medium potatoes, diced into 1/2-inch cubes
- 1/2 cup diced onion
- 1/2 cup diced bell peppers (any color)
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin (optional)

- Cook the protein: In the same skillet, cook the sausage (or bacon/chorizo) until browned and cooked through. Remove and set aside.
- Cook the veggies: Add the onions and bell peppers to the skillet with a small drizzle of oil if needed. Sauté for 3–4 minutes until softened. Set aside.
Make the Eggs
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Heat 1 tbsp butter in a nonstick skillet over medium-low heat. Pour in the eggs and cook, stirring gently, until soft and fluffy. Remove from heat.
Assemble the Burritos
- Warm tortillas: Heat tortillas in a dry skillet or microwave for 20–30 seconds to make them pliable.
- Layer the fillings: Place a tortilla on a flat surface. Add 1/4 of the scrambled eggs, potatoes, sausage, and sautéed veggies. Top with shredded cheese and any optional toppings like salsa, avocado, or hot sauce.
- Wrap tightly: Fold in the sides of the tortilla, then roll it up tightly from the bottom.
Toast the Burritos
- Heat a clean skillet over medium heat. Place the wrapped burrito seam-side down in the skillet.
- Cook for 2–3 minutes per side until golden and crispy. This step seals the burrito and adds a delicious crunch.
