- 2 cups sweet potatoes, butternut squash or new potatoes, cubed
- 1 bell pepper, chopped
- 1 zucchini, sliced or cubed –can substitute 1 cup Brussel sprouts or broccoli
- 1 red onion, chopped
- 1 large carrot, cubed
- 1 beet, cubed(optional)
- 1 cup cherry tomatoes (optional)
- 3 cloves garlic, minced (or two tsp garlic powered)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 sprig fresh rosemary leaves (or 1 teaspoon dried rosemary)
- Salt and pepper, to taste
- Fresh herbs (parsley or basil) for garnish
Directions
- Preheat the Oven: Preheat your oven to 450°F.
- Prepare Vegetables and Sausages:
- In a large bowl, toss together the sliced chicken sausages– or sliced turkey sausage, cubed sweet potatoes, butternut squash and or new potatoes, cubed carrots, cubed beet if using, chopped bell pepper, sliced or cubed zucchini — or substitutes, red onion, and cherry tomatoes if using.
- Add minced garlic, dried thyme, dried rosemary, olive oil, salt, and pepper. Toss until everything is well coated.
- Arrange on a Baking Sheet (or in large cast iron skillet)
- Spread the mixture evenly on a large baking sheet or roasting pan and toss with oil and seasonings.
