These air-fried crappie fillets are a deliciously crispy and healthy way to enjoy fresh fish. The blend of panko breadcrumbs, cornmeal, and Parmesan cheese creates a golden crust that’s light yet flavorful, while seasonings like paprika, garlic, and onion powder add a savory depth. Cooking in the air fryer ensures the fillets stay tender and juicy inside without excess oil. Ingredients
- 6–8 crappie fillets (cleaned and dried)
- 1 cup panko breadcrumbs (or regular breadcrumbs)
- 1/2 cup cornmeal
- 1/2 cup grated Parmesan cheese (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 eggs (beaten)
- Cooking spray or olive oil spray
- Lemon wedges (for serving)
- Chopped fresh parsley for garnish
Directions
- Preheat the Air Fryer
Preheat your air fryer to 375°F (190°C) for about 5 minutes. - Prepare the Breading
In a shallow bowl, mix together the panko breadcrumbs, cornmeal, Parmesan cheese (if using), garlic powder, onion powder, paprika, black pepper, and salt. - Egg Wash
In a separate bowl, beat the eggs. - Coat the Fillets

- Arrange in the Air Fryer
Lightly spray the air fryer basket with cooking spray. Place the breaded fillets in a single layer in the basket. Avoid overcrowding to ensure even cooking. Spray the tops of the fillets lightly with cooking spray. - Cook the Fillets
Air fry the fillets for 8–10 minutes, flipping halfway through. Cook until the fillets are golden brown and crispy. The internal temperature should reach 145°F (63°C). - Serve
