- 3/4 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1 small piece of ginger, minced
- 1 bell pepper, sliced
- 1/2 cup very thinly sliced carrots
- 1/2 cup baby or sliced kale (spinach can be substitute)
- 1 cup broccoli florets (optional)
- 1 cup snap peas
- 2 green onions, sliced (for garnish)

Directions
- Marinate Chicken: In a bowl, combine the egg white, cornstarch, rice wine or dry sherry, sesame oil, and salt. Add the sliced chicken and mix well to coat. Let it marinate for at least 30 minutes.
- Velveting Chicken: In a large pot, bring water to a gentle simmer (not boiling). Add the marinated chicken and stir gently to separate the pieces. Cook for 1-2 minutes until the chicken is opaque but not fully cooked. Remove with a slotted spoon and drain well.
- Prepare Sauce: In a small bowl, mix the chicken broth, soy sauce, oyster sauce, and sugar until well combined.
