Hearty air fried walleye fillets

Deliciously crispy air-fried walleye fillets.

These air-fried walleye fillets are a healthy twist on a classic dish. The walleye’s mild, flaky flesh is perfectly enhanced by air frying, which creates a crisp, golden exterior without the need for excess oil. This method retains the fish’s delicate flavors while providing a satisfying crunch. Serving suggestions include pairing the fillets with a fresh, tangy coleslaw or roasted vegetables like asparagus or Brussels sprouts. For a complete meal, add a side of creamy mashed potatoes or a light quinoa salad. A squeeze of lemon and a sprinkle of fresh herbs, and some tartar sauce elevate the dish to a gourmet level.

Ingredients

  • 4 walleye fillets
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Cooking spray
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Directions

  1. Prepare the Coating
    • Place the flour in a shallow dish.
    • Beat the eggs in a second shallow dish.
    • In a third shallow dish, mix the panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
  2. Coat the Fillets
    • Pat the walleye fillets dry with paper towels.
    • Dredge each fillet in the flour, shaking off any excess.
    • Dip the floured fillets in the beaten eggs, ensuring they are fully coated.
    • Press the fillets into the panko mixture, coating them evenly on both sides.
  3. Preheat the Air Fryer
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  4. Air Fry the Fillets
    • Lightly spray the air fryer basket with cooking spray.
    • Place the coated fillets in the basket in a single layer, ensuring they do not overlap. You may need to cook them in batches.
    • Lightly spray the tops of the fillets with cooking spray.
    • Air fry the fillets at 400°F (200°C) for 10-12 minutes, flipping them halfway through, until the coating is golden brown and the fish is cooked through.
  5. Serve
    • Remove the fillets from the air fryer and let them rest for a couple of minutes.
    • Serve with lemon wedges and garnish with fresh parsley.
