Hearty grilled street corn

Ingredients

  • 4 ears of fresh corn on the cob, husked and silk removed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crumbled Cotija cheese (or Parmesan as a substitute)
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika (smoked paprika is great too)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1-2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro (optional)
  • Salt and pepper to taste

Directions

  1. Preheat Grill
    • Preheat your grill to medium-high heat.
  2. Prepare Corn
    • Husk the corn and remove all the silk. You can also break the cobs in half if needed.
  3. Grill Corn
    • Place the corn on the grill and cook, turning occasionally, for about 10-15 minutes until the kernels are charred and tender.
  4. Prepare the Sauce
    • In a bowl, mix the mayonnaise, sour cream (or Greek yogurt), lime juice, chili powder, paprika, garlic powder, ground cumin, and a pinch of salt and pepper.
  5. Coat the Corn
    • Once the corn is grilled, brush it with the mayonnaise mixture while it’s still hot. Make sure to coat it evenly.
  6. Add Cheese and Garnish
    • Sprinkle the crumbled Cotija cheese over the coated corn. Garnish with chopped cilantro if desired.
  7. Serve
    • Serve immediately, with extra lime wedges on the side for additional tang.
