
The New Orleans praline is one of the most iconic regional candies in America and a cornerstone of Southern confectionery tradition. It is a creamy, fudgy, pecan-studded patty that is simultaneously rich, sweet, buttery, and deeply nutty. Unlike the hard, brittle French praline it descended from, the New Orleans version is soft and almost melt-in-your-mouth, with a grainy sugar texture that is entirely its own. The key is cooking the sugar mixture to exactly the right temperature and then beating it vigorously off the heat until it thickens and loses its gloss before dropping it onto parchment. Timing is everything.
Ingredients
- 2 cups granulated sugar
- 1 cup light brown sugar, packed
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 2 cups pecan halves, toasted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions
- Line two baking sheets with parchment paper and lightly butter the parchment.
- Toast pecan halves in a dry skillet over medium heat for 3 to 4 minutes until fragrant. Set aside.
- Combine both sugars and heavy cream in a heavy saucepan over medium heat.
- Stir until sugars dissolve then cook without stirring until the mixture reaches 238 degrees F on a candy thermometer.
- Remove from heat immediately and add butter, vanilla, and salt. Do not stir yet.
- Let mixture cool undisturbed for 5 minutes until it reaches about 170 degrees F.
- Add toasted pecans and begin stirring vigorously with a wooden spoon.
- Stir continuously for 3 to 5 minutes until the mixture thickens, loses its gloss, and begins to look creamy and opaque.
- Working quickly, drop heaping tablespoons onto prepared parchment.
- Let set at room temperature for 30 minutes until firm.
Tips and variations
- The window between perfectly beaten and over-beaten praline is narrow. As soon as the mixture loses its sheen and thickens, drop it immediately.
- If the mixture hardens in the pot before you finish dropping, add a tablespoon of cream and stir over low heat to loosen.
- Add a teaspoon of bourbon to the mixture along with the vanilla for an adult variation.
- Swap pecans for walnuts or macadamia nuts for a different nut flavor.
- Sprinkle a pinch of flaky sea salt on each praline immediately after dropping for a salted variation.
- Store in an airtight container at room temperature with parchment between layers for up to 1 week.
