Hearty angel food lemon bars recipe

A close-up of two layers of lemon dessert squares dusted with powdered sugar, topped with lemon slices, on a beige plate with a lemon in the background.

These dreamy bars combine the cloud-like lightness of angel food cake with the bright, tangy punch of lemon curd filling, creating a dessert that feels indulgent yet surprisingly airy. The angel food base bakes up tender and slightly chewy, soaking in the silky lemon layer just enough to create a perfect contrast of textures. Fresh lemon zest and juice give the filling a vivid citrus flavor that cuts through the sweetness, making every bite feel refreshing. Serve them chilled on a warm summer afternoon alongside iced tea or sparkling lemonade, or plate them with a dollop of fresh whipped cream and a few fresh berries for an elegant finish.

Ingredients

Angel Food Base

  • 1 box (16 oz) angel food cake mix
  • 2/3 cup cold water
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon zest

Lemon Filling

  • 4 large eggs, room temperature
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup fresh lemon juice (about 3 to 4 lemons)
  • 2 tablespoons fresh lemon zest
  • Pinch of salt

Finishing

  • Powdered sugar for dusting
  • Fresh lemon slices or zest curls for garnish (optional)

Directions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking pan with non-stick spray.
  2. In a large bowl, beat the angel food cake mix with cold water, vanilla extract, and lemon zest on low speed for 30 seconds, then increase to medium speed and beat for 1 minute until fluffy and well combined.
  3. Spread the angel food batter evenly into the prepared pan. It will be thick and airy.
  4. Bake for 20 to 22 minutes until the top is lightly golden and a toothpick inserted in the center comes out clean. Do not overbake.
  5. While the base bakes, prepare the lemon filling. In a medium bowl, whisk together the eggs and granulated sugar until smooth and slightly pale.
  6. Add the flour, baking powder, and salt to the egg mixture and whisk until fully incorporated.
  7. Stir in the fresh lemon juice and lemon zest until the filling is smooth and uniform.
  8. Remove the baked angel food base from the oven. It will deflate slightly, which is expected.
  9. Immediately pour the lemon filling evenly over the hot angel food base.
  10. Return the pan to the oven and bake for an additional 20 to 25 minutes until the lemon layer is set and no longer jiggles in the center.
  11. Remove from the oven and allow to cool completely in the pan at room temperature, about 1 hour.
  12. Transfer to the refrigerator and chill for at least 2 hours or overnight for the best texture and flavor.
  13. Dust generously with powdered sugar just before serving. Cut into bars using a sharp knife wiped clean between cuts.
  14. Garnish with lemon slices or zest curls if desired and serve chilled.

Tips and variations

  • For the cleanest cuts, run your knife under hot water and wipe dry between each slice.
  • Do not substitute bottled lemon juice. Fresh lemon juice makes a significant difference in flavor.
  • The bars keep well covered in the refrigerator for up to 5 days.
  • For a Meyer lemon version, substitute Meyer lemons for a slightly sweeter, more floral filling.
  • Add a thin layer of fresh whipped cream or cream cheese frosting between the base and lemon layer for an extra rich variation.
  • For a raspberry lemon version, press a handful of fresh raspberries into the lemon filling before the second bake.
  • These bars freeze well. Wrap individual bars in plastic wrap and store in a freezer bag for up to 2 months. Thaw overnight in the refrigerator.
  • For a more pronounced lemon flavor, add 1/4 teaspoon pure lemon extract to the filling.
