Hearty olive oil spray

An olive oil spray gives you complete control over the quality of oil you use and eliminates the propellants and additives found in commercial cooking sprays. A light, even coat of high-quality extra virgin olive oil is perfect for greasing pans, coating vegetables before roasting, lightly dressing salads, and finishing dishes. The key is using a good quality oil and a pump-style glass spray bottle that creates a true fine mist rather than a stream. This is all about the sprayer.

Ingredients

  • high-quality extra virgin olive oil or avocado oil
  • glass sprayer

Directions

  1. Fill a clean glass pump spray bottle with olive oil.
  2. For pan greasing, spray from 6 inches away and coat evenly.
  3. For salads, mist lightly over greens just before tossing.
  4. For roasting vegetables, spray evenly over cut vegetables before seasoning.
  5. For baking, spray pans and dust with flour if needed.

Tips and variations

  • Avocado oil has a higher smoke point and is better for high-heat cooking
  • Add a sprig of fresh rosemary or thyme to the bottle for an infused herb oil spray
  • Add a peeled garlic clove for garlic-infused oil (use within 1 week and refrigerate)
  • Works beautifully for spraying the tops of bread loaves before baking for a golden crust
  • Do not use in an aerosol-style bottle as pure oil can clog the mechanism; use a pump mister
