- 3/4 cup fine yellow cornmeal
- 1/4 cup all-purpose flour (for the cornmeal mix)

- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
For frying
- Vegetable oil or canola oil, about 1/2 inch deep in the pan
Directions
- Slice the green tomatoes to 1/4 inch thickness and lay them on a paper towel-lined tray. Sprinkle both sides with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry.
- Set up a three-station dredging line. Place 1/2 cup flour in the first shallow dish. Whisk together the eggs and buttermilk in the second dish. In the third dish, combine the cornmeal, 1/4 cup flour, garlic powder, smoked paprika, black pepper, and cayenne.
- Dredge each tomato slice in the flour first, shaking off any excess. Dip it into the egg and buttermilk mixture, letting the excess drip off. Press it firmly into the cornmeal mixture, coating both sides evenly.
- Heat about 1/2 inch of oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat until it reaches 375 degrees F. A pinch of cornmeal dropped in should sizzle immediately.
- Fry the tomato slices in batches, being careful not to crowd the pan. Cook for 2 to 3 minutes per side until deep golden brown and crispy.
- Transfer to a wire rack set over a baking sheet to drain. Do not stack them or they will steam and lose their crunch.
- Season lightly with a pinch of salt immediately after frying. Serve hot.

- Choose tomatoes that are fully green and very firm. Any hint of pink means they are starting to ripen and will fall apart in the pan.
