This is the legendary Mexican street food recipe for us to make at home – Lebanese-inspired pork marinated in chilies and pineapple, traditionally cooked on a vertical spit (trompo). Ingredients
For the Adobo Marinade
- 6 dried guajillo chilies, stems and seeds removed
- 4 dried ancho chilies, stems and seeds removed
- 2 dried chipotle chilies, stems and seeds removed
- 1 cup fresh orange juice
- ¼ cup white vinegar
- ¼ cup achiote paste (annatto)
- 6 cloves garlic
- 1 white onion, quartered
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp black pepper
- 2 tsp salt
For the Tacos
- 4 lbs pork shoulder, sliced ¼-inch thick
- 1 fresh pineapple, cored and sliced into rings
- Small corn tortillas (4-inch)
- 1 white onion, finely diced
- 1 cup fresh cilantro, chopped
- Mexican crema or sour cream
- Salsa verde
- Lime wedges
- Mexican hot sauce (Valentina or Cholula)
Directions
Step 1: Make the Adobo (30 minutes)
- Toast the chilies: Heat a dry skillet over medium heat. Toast chilies 30 seconds per side until fragrant (don’t burn them).
- Rehydrate: Place toasted chilies in a bowl, cover with hot water, and soak 20 minutes until softened.
- Blend: Drain chilies and blend with orange juice, vinegar, achiote paste, garlic, onion, oregano, cumin, pepper, and salt until smooth.
- Strain: Push through a fine-mesh sieve for silky texture (optional but recommended).
Step 2: Marinate the Pork (4+ hours)
- Slice pork into ¼-inch thick pieces against the grain.
- Marinate: Coat pork thoroughly with adobo marinade in a large bowl or zip-lock bag.
- Refrigerate at least 4 hours, preferably overnight (up to 24 hours).
Step 3: Cook the Pork (20 minutes)
- Preheat a large cast-iron skillet or comal over medium-high heat.
- Cook pork in batches without overcrowding, 2-3 minutes per side until caramelized and slightly charred.
- Chop roughly into bite-sized pieces as it cooks.
- Keep warm in a low oven while cooking remaining batches.
Step 4: Grill the Pineapple (10 minutes)
- Grill pineapple rings on the same hot pan until caramelized and slightly charred, 2-3 minutes per side.
- Dice into small pieces and set aside.
Step 5: Assemble the Tacos
- Warm tortillas on a comal or dry skillet until pliable and lightly charred.
- Fill each tortilla with chopped pork.
- Top with diced pineapple, onion, and cilantro.
- Serve with lime wedges, salsa verde, crema, and hot sauce.
