This mousse is what happens when indulgence and nutrition stop competing and start cooperating. A silky blended cottage cheese base gives you the creamy, cloud-like texture of a classic French mousse without the heavy cream doing all the heavy lifting. Vanilla protein powder deepens the flavor while quietly stacking your macros, and chia seeds bring the whole thing together in the most unexpected way. As they bloom, they thicken the mousse into something between a pudding and a parfait, rich, spoonable, and deeply satisfying. The fiber and omega-3s they add make every bite work harder for you. Serve it chilled in pretty glasses with fresh berries or a drizzle of honey, and nobody will guess it doubles as a genuinely good meal.
Ingredients
- 1 cup full-fat cottage cheese (or Greek yogurt)
- 1 scoop (about 30g) vanilla protein powder
- 2 tablespoons powdered sugar or honey (adjust to taste)
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 2 tablespoons chia seeds
- 3 tablespoons milk of choice (to help chia seeds bloom)
- ½ cup heavy whipping cream (optional, for extra airiness)
- 1 tablespoon cream cheese (optional, for extra richness)
Directions
- In a small bowl, combine chia seeds with the milk of your choice and stir well. Let sit for 10 to 15 minutes, stirring once or twice, until a soft gel forms.
- Add cottage cheese to a high-speed blender or food processor and blend for 60 to 90 seconds until completely smooth and no curds remain.
- Add the vanilla protein powder, sweetener, vanilla extract, and salt. Blend again until fully combined and creamy.
- Fold the bloomed chia seed mixture into the blended base, stirring gently to distribute evenly.
- Taste and adjust sweetness as needed.
- If using heavy whipping cream, whip it separately in a chilled bowl until stiff peaks form.
- Gently fold the whipped cream into the mousse mixture using a spatula, preserving as much air as possible.
- Spoon or pipe the mousse into serving glasses or ramekins.
- Refrigerate for at least 30 to 45 minutes to allow the chia seeds to fully set and the mousse to chill.

Tips and variations
- For a completely smooth mousse, blend the chia seeds directly into the cottage cheese base instead of blooming them separately
- Use coconut milk for blooming the chia seeds to add a subtle tropical note
- Increase chia seeds to 3 tablespoons if you prefer a thicker, more pudding-style consistency
- Let the finished mousse sit overnight in the refrigerator for maximum thickness and a deeper set
- Top with sliced kiwi, mango, or fresh berries to complement the vanilla flavor
- Stir in a teaspoon of lemon zest for a bright, citrusy lift that pairs beautifully with the chia texture
- The chia seeds also make this mousse more stable for meal prep, holding its structure well for up to 4 days refrigerated
