- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper to taste
Optional add-ins
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced black olives
- 1 jalapeño, seeded and minced
- 1/2 avocado, diced (add just before serving)
Directions
- Drain and rinse the black-eyed peas thoroughly under cold water and allow them to drain completely in a colander for a few minutes.
- Combine the peas, cherry tomatoes, cucumber, red and green bell peppers, red onion, celery, parsley, and basil in a large mixing bowl.
