Ingredients
For the sandwich
- 4 ciabatta rolls or thick sourdough slices, split and lightly toasted
- 12 oz thinly sliced roasted turkey breast
- 4 oz pancetta, thinly sliced
- 2 cups fresh arugula, loosely packed
- 4 slices provolone or fresh mozzarella
- 1 large heirloom or beefsteak tomato, thinly sliced
- Salt and freshly cracked black pepper to taste
For the lemon-herb aioli
- 1/2 cup mayonnaise
- 1 clove garlic, minced or pressed
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh basil, finely chopped
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- In a small bowl, whisk together the mayonnaise, garlic, lemon juice, lemon zest, fresh basil, and Dijon mustard. Season with salt and pepper. Refrigerate until ready to use.
- In a skillet over medium heat, cook the pancetta slices for 3 to 4 minutes per side until lightly crispy and golden. Transfer to a paper towel-lined plate to drain.
- Lightly toast the ciabatta rolls or sourdough slices under the broiler or in a toaster until golden at the edges.
- Spread a generous layer of lemon-herb aioli on both cut sides of each roll.
- Layer the bottom half with turkey slices, followed by the provolone or fresh mozzarella.
- Add 2 to 3 slices of pancetta on top of the cheese.
- Layer on the tomato slices and season lightly with salt and cracked black pepper.
- Top with a generous handful of fresh arugula.
- Place the top half of the roll on and press gently. Serve immediately.
