Hearty lemon butter halibut

Firm white flaky fish with a zesty lemon butter.

This Lemon-Butter Halibut recipe is a delightful balance of rich and tangy flavors. The seared halibut fillets are tender and flaky, while the lemon-butter sauce adds a luscious, bright finish. The combination of garlic, lemon juice, and zest infuses the dish with a vibrant freshness, and the optional white wine provides a subtle complexity. Serve this elegant dish with roasted asparagus or a light green salad to complement the rich flavors. A side of garlic mashed potatoes would also pair wonderfully, adding a comforting element.

Ingredients

  • 4 halibut fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1/4 cup dry white wine (optional)
  • 1/4 cup fresh parsley, chopped
  • Lemon slices, for garnish

Directions

  1. Prepare the Halibut: Pat the halibut fillets dry with paper towels and season both sides with salt and pepper.
  2. Sear the Fish: Heat olive oil in a large skillet over medium-high heat. Add the halibut fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook until fragrant, about 1 minute. Stir in the lemon juice, lemon zest, and white wine (if using). Simmer for 2-3 minutes until slightly reduced.
  4. Combine: Return the halibut fillets to the skillet and spoon the sauce over the top. Cook for an additional 1-2 minutes to warm the fish.
  5. Serve: Garnish with chopped fresh parsley and lemon slices. Serve immediately.

This halibut recipe combines the richness of butter with the bright, zesty flavor of lemon, creating a beautifully balanced dish.
