Hearty air fryer zucchini fries

These air fryer zucchini fries are a guilt-free delight, offering a crispy texture and savory flavor without the excess oil of traditional frying. The combination of Parmesan cheese and panko breadcrumbs provides a satisfying crunch, while garlic powder, onion powder, and paprika add a burst of flavor. These zucchini fries make a perfect appetizer or side dish, pairing wonderfully with a variety of dipping sauces like marinara, ranch, or aioli. Ingredients

  • 2 medium zucchinis, cut into fry-sized sticks (yellow squash also works for this recipe)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Cooking spray

Directions

  1. Preheat: Preheat your air fryer to 400°F (200°C).
  2. Prepare the coating: In a shallow bowl, mix the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip and coat: Dip each zucchini stick into the beaten eggs, then coat evenly with the breadcrumb mixture. Press lightly to adhere the coating.
  4. Arrange in air fryer: Place the coated zucchini sticks in a single layer in the air fryer basket. Lightly spray them with cooking spray.
  5. Cook: Air fry for 10-12 minutes, turning halfway through, until they are golden brown and crispy.
  6. Serve: Remove from the air fryer and serve immediately with your favorite dipping sauce.
