Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup Thai peanut sauce
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup shredded carrots
  • 1 cup snap peas
  • 2 cups cooked rice
  • 1/4 cup chopped peanuts (optional)
  • Fresh cilantro and or green onions for garnish

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chicken pieces with the Thai peanut sauce, ensuring all pieces are well-coated.
  3. In a baking dish, layer the cooked rice, followed by the bell peppers, carrots, and snap peas.
  4. Place the chicken on top of the vegetables.
  5. Cover the dish with aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through.
  6. Remove the foil and bake for an additional 5 minutes to allow the top to brown slightly.
  7. Garnish with chopped peanuts and fresh cilantro before serving.
