Hearty shrimp scampi

This Shrimp Scampi recipe features succulent shrimp cooked in a rich sauce of butter, olive oil, garlic, white wine, and lemon juice, with a hint of red pepper flakes for a subtle kick. Ingredients

  • 1-pound large shrimp, peeled and deveined
  • 6 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (use less salt if using cooking wine)
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning (optional)
  • 1/4 cup fresh parsley, chopped
  • Cooked pasta or crusty bread, for serving

Directions

  1. Prepare the Shrimp
    • Season the shrimp with salt and pepper.
  2. Cook the Shrimp
    • In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium-high heat.
    • Add the shrimp and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce
    • In the same skillet, add the remaining butter and olive oil.
    • Add the garlic and red pepper flakes, and sauté until fragrant, about 1 minute.
    • Pour in the white wine, add Italian seasoning if using and lemon juice, and bring to a simmer. Cook until the sauce reduces by little less than half, about 2 minutes.
  4. Combine and Serve
    • Return the shrimp to the skillet and toss to coat in the sauce.
    • Stir in the parsley and adjust seasoning with salt and pepper.
    • Serve immediately over cooked pasta and or with crusty bread.
