Light, airy popovers with a golden crust.

These popovers have a light, airy texture and crispy exterior. The high moisture content from eggs and milk creates steam, making them puff up, while the butter adds richness. Their delicate, slightly chewy inside contrasts beautifully with the golden crust, making each bite irresistible. Popovers are versatile and can be served with a variety of dishes. They pair wonderfully with butter and jam for breakfast or as a side with roast meats, soups, or stews. For a sweet treat, try them with honey or fruit compote. Their simple, yet satisfying flavor makes them a timeless favorite.
Ingredients
- 1 cup all-purpose flour
- 1 cup (whole) milk (room temperature)
- 2 large eggs (room temperature)
- 1/2 teaspoon salt
- 1 tablespoon unsalted butter (melted)
- Optional: 1 teaspoon sugar (for slightly sweet popovers)
Directions
- Preheat the Oven
- Preheat your oven to 450°F (230°C). Place a popover pan or a muffin tin in the oven while it preheats. This helps the popovers rise better.
- Prepare the Batter
- In a medium bowl, whisk together the flour and salt (and sugar, if using).
- In a separate bowl, whisk together the eggs and milk until well combined.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth. The batter should be thin and lump-free.
- Stir in the melted butter.
- Fill the Pan
- Carefully remove the hot popover pan from the oven and lightly grease it with butter or nonstick spray.
- Fill each cup about halfway with the batter. Be cautious, as the pan will be hot.
- Bake
- Bake the popovers at 450°F (230°C) for 15 minutes. Do not open the oven door during this time, as the popovers need consistent heat to rise properly.
- After 15 minutes, reduce the oven temperature to 350°F (175°C) and continue baking for another 15-20 minutes, or until the popovers are golden brown and crispy.
- Serve
- Once done, remove the popovers from the oven and carefully take them out of the pan. Serve immediately, as they are best enjoyed fresh.
Tips
- Ensure your eggs and milk are at room temperature to help the popovers rise better.
- You can experiment with adding herbs, cheese, or spices to the batter for a savory twist.
- These are amazing served with a dollop of honey butter.
