Hearty Spicy Tofu Scramble

This Spicy Tofu Scramble is a flavorful and versatile dish that serves as a delicious alternative to scrambled eggs. Made with crumbled firm tofu, it’s seasoned with turmeric, smoked paprika, and cumin, creating a vibrant, savory profile. The addition of sautéed onions, bell peppers, and cherry tomatoes enhances its texture and freshness. The scramble is not only packed with protein but also offers a satisfying mix of spices and vegetables, making it a nutrient-dense option. Ingredients

  • 1 block (14 oz) firm tofu, drained and crumbled
  • 1 tablespoon olive oil or vegetable oil
  • 1 small onion, finely diced
  • 1 bell pepper (any color), diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1 tablespoon soy sauce or tamari
  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • Fresh spinach or kale (optional, for added greens)

Directions

  1. Prepare the Tofu
    • Drain the tofu and pat it dry with paper towels. Crumble the tofu into bite-sized pieces with your hands or a fork.
  2. Cook the Vegetables
    • Heat the oil in a large skillet over medium heat.
    • Add the diced onion and bell pepper. Sauté for 5-7 minutes, or until the vegetables are soft and beginning to caramelize.
  3. Add the Tofu
    • Add the crumbled tofu to the skillet and cook for about 5 minutes, stirring occasionally, until the tofu starts to brown slightly.
  4. Season and Flavor
    • Add the garlic, turmeric, smoked paprika, cumin, cayenne pepper, salt, and black pepper to the skillet. Stir well to coat the tofu and vegetables with the spices.
    • Pour in the soy sauce and cook for another 2-3 minutes, allowing the tofu to absorb the flavors and get slightly crispy.
  5. Add Tomatoes and Greens (Optional)
    • Stir in the cherry tomatoes and cook for another 2 minutes, just until they start to soften.
    • If using spinach or kale, add it to the skillet and cook for another 1-2 minutes, until wilted.
  6. Finish and Serve
    • Sprinkle nutritional yeast over the scramble if using and stir well.
    • Taste and adjust seasoning as needed.
  7. Serve Hot
    • Serve your tofu scramble hot, garnished with fresh herbs like parsley or chives if desired. It pairs wonderfully with toast, avocado slices, or in a breakfast burrito.
