Hearty Herb Roasted Pork Loin

Herb infused pork loin.

Herb-Roasted Pork Loin is exceptional for its succulent, juicy meat infused with a blend of aromatic herbs like marjoram, rosemary, and thyme. The slow roasting process caramelizes the exterior, creating a flavorful crust while maintaining a tender, moist interior. The garlic and herbs provide a savory depth, complemented by a hint of white wine or chicken broth that adds richness. Serve it with roasted vegetables such as carrots, potatoes, and Brussels sprouts to complement its hearty flavor. A side of creamy mashed potatoes or a fresh green salad also pairs beautifully, enhancing the meal with contrasting textures and flavors.

Ingredients

  • 2-3 lb pork loin roast
  • 3 tablespoons olive oil
  • 2 tablespoons fresh marjoram leaves, chopped (or 2 teaspoons dried marjoram)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup white wine or chicken broth

Directions

  1. Preheat the Oven
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Pork Loin
    • Pat the pork loin dry with paper towels. Trim any excess fat if necessary.
  3. Make the Herb Mixture
    • In a small bowl, mix together olive oil, marjoram, rosemary, thyme, minced garlic, salt, and pepper.
  4. Season the Pork
    • Rub the herb mixture all over the pork loin, ensuring it is evenly coated.
  5. Roast the Pork
    • Place the pork loin in a roasting pan. Pour white wine or chicken broth into the pan.
    • Roast in the preheated oven for about 45-60 minutes, or until the internal temperature reaches 145°F (63°C) and the pork is slightly pink in the center.
  6. Rest and Serve
    • Remove the pork loin from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a moist roast.
    • Slice and serve with the pan juices drizzled over the top.

This Herb-Roasted Pork Loin is a crowd-pleaser that combines the fragrant notes of marjoram with other herbs to create a savory and satisfying dish perfect for family dinners or special occasions.
