Hearty Grilled Mahi Mahi

This grilled mahi mahi recipe offers a healthy and flavorful way to enjoy this tender fish. Marinated in a blend of olive oil, garlic, spices, and lemon juice, each fillet is grilled to perfection, resulting in a moist and flaky texture with a hint of smoky char. Serve the mahi mahi with a side of steamed vegetables such as asparagus or broccoli to complement its lightness. Any grilled vegetables or a fresh salad with a citrus vinaigrette and quinoa pilaf makes nutritious accompaniments. Garnish with lemon slices for a bright finish. Ingredients

  • 4 mahi mahi fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • Lemon slices, grilled or not, for serving
  • Fresh parsley or cilantro, chopped (optional, for garnish)

Directions

  1. Prepare the Mahi Mahi
    • Pat dry the mahi mahi fillets with paper towels and place them in a shallow dish or a resealable plastic bag.
  2. Make the Marinade
    • In a small bowl, whisk together the olive oil, minced garlic, paprika, cumin, coriander, salt, pepper, and lemon juice.
  3. Marinate the Fish
    • Pour the marinade over the mahi mahi fillets, making sure they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  4. Grill the Mahi Mahi
    • Preheat your grill to medium-high heat.
    • Remove the mahi mahi fillets from the marinade and discard the marinade.
    • Grill the fillets for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
  5. Serve
    • Transfer the grilled mahi mahi fillets to a serving platter. Serve hot with lemon slices on the side.
    • Garnish with chopped parsley or cilantro, if desired.

Note: If you prefer to bake the mahi mahi instead of grilling, preheat your oven to 400°F (200°C) and bake the fillets on a lined baking sheet for about 15-20 minutes, or until cooked through
