Hearty avocado chicken salad

This avocado chicken salad is deliciously refreshing, combining creamy avocado, juicy chicken, and crisp vegetables like bell pepper and celery. The lime dressing adds a tangy zest, while red pepper flakes provide a subtle kick. It’s healthy, packed with protein, healthy fats, fiber, vitamins, and minerals for a balanced meal.

Ingredients

Salad

  • 2 cups cooked chicken, shredded or cubed
  • 1 ripe avocado, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)

Dressing

  • Juice of 1 lime
  • 2 tablespoons avocado oil
  • Salt and pepper to taste
  • red pepper flakes to tastes, for some kick, optional

Directions

  1. Prepare the Ingredients
    • Shred or cube the cooked chicken.
    • Dice the avocado.
    • Dice the bell pepper.
    • Finely chop the red onion, cilantro, and celery.
