Hearty egg roll bowl

This egg roll bowl is a delicious and healthy dish, combining the savory flavors of ground pork or turkey with the freshness of coleslaw mix and matchstick carrots. Aromatics like garlic, ginger, and onion add depth, while soy sauce, rice vinegar, and sesame oil create a balanced, umami-rich sauce. The optional sriracha adds a spicy kick. This dish is not only flavorful but also quick and easy to prepare. Serve it with a side of steamed rice or cauliflower rice for a complete meal. For added texture and flavor, top with crunchy wonton strips or a drizzle of extra sriracha.

Ingredients

  • 1 lb ground pork or ground turkey
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 (14 oz) bag coleslaw mix or homemade coleslaw
  • 1 cup matchstick carrots
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha or to taste (optional)
  • 2 green onions, sliced
  • Sesame seeds for garnish

Directions

  1. Cook the Meat
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Add the ground pork or turkey and cook until browned and cooked through, breaking it apart as it cooks. Drain any excess fat if necessary.
  2. Add Aromatics
    • Add the chopped onion, minced garlic, and minced ginger to the skillet. Cook for 2-3 minutes until fragrant and the onion is softened.
  3. Cook the Vegetables
    • Add the coleslaw mix and matchstick carrots to the skillet. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender but still have some crunch.
  4. Add the Sauce
    • Stir in the soy sauce, rice vinegar, sesame oil, and sriracha (if using). Mix well to combine all the ingredients and cook for another 2-3 minutes.
  5. Finish and Serve
    • Remove the skillet from heat. Stir in the sliced green onions.
    • Serve the egg roll bowl hot, garnished with sesame seeds.
