Hearty seven layer salad

Layers of crisp vegetables, bacon, cheese, hard boiled eggs and a creamy dressing.

This Seven Layer Salad is a classic potluck dish featuring layers of crisp vegetables, bacon, cheese, hard boiled eggs and a creamy dressing. I tend to mix it up on the order I layer things in depending on what color combos fit the season. I also vary the bell pepper colors and onions to whatever I have or think will look good with the rest of what I am serving. If I have avocado, I like to add chopped avocado at the time of serving for those who like it. You can also swap out buttery crushed croutons for the bacon if desired.

Ingredients

  • 6 cups chopped or shredded lettuce or mixed salad greens
  • 1 cup diced tomatoes or cherry tomatoes, halved
  • 6 hard boiled eggs, sliced
  • 1 cup red bell pepper, chopped
  • 1 cup frozen peas, thawed
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 tablespoon sugar
  • 1/2 cup sour cream
  • 8 slices bacon, cooked and crumbled
  • Salt and pepper, to taste
  • Chopped avocado and or fresh parsley for garnish (optional)

Directions

  1. Layer the salad
    • In a large glass bowl, casserole or trifle dish, layer the chopped lettuce or mixed greens as the first layer.
  2. Add vegetables
    • Layer the cherry tomatoes, sliced eggs, chopped red bell pepper, thawed peas, and finely chopped red onion on top of the lettuce.
  3. Prepare the dressing
    • In a separate bowl, mix together mayonnaise, sugar, and sour cream. Season with salt and pepper to taste.
  4. Spread dressing
    • Spread the dressing evenly over the top of the salad, making sure to cover the entire surface and seal the edges.
  5. Cheese layer
    • Sprinkle the shredded cheddar cheese as the next layer.
  6. Bacon drunch
    • Sprinkle the crumbled bacon evenly over the cheese layer.
  7. Refrigerate
    • Cover the salad with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld.
  8. Serve
    • Before serving, garnish with chopped fresh parsley if desired.
