Hearty Hungarian goulash recipe

A hearty dish of beef stew with vegetables, garnished with fresh parsley, served alongside egg noodles and a slice of crusty bread with a dollop of sour cream.

This dish tastes deeply comforting because tender beef simmers slowly with sweet paprika and caraway seeds, creating a rich, smoky stew that warms you from the inside out. It pairs wonderfully with crusty bread, buttered noodles, or a dollop of sour cream. Serve it in a deep bowl with fresh parsley sprinkled on top for a rustic, Eastern European presentation.

Ingredients

  • 2 pounds beef chuck, cubed
  • 2 tablespoons vegetable oil
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 4 cups beef stock
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 red bell pepper, diced
  • Salt and pepper to taste
  • Sour cream, for serving

Directions

  1. Heat the oil in a large pot and brown the beef cubes in batches, then set aside.
  2. Add the onions to the pot and cook until softened.
  3. Stir in the garlic, paprika, and caraway seeds, cooking for 1 minute.
  4. Add the tomato paste and stir to combine.
  5. Return the beef to the pot and pour in the beef stock.
  6. Cover and simmer on low for 1.5 hours.
  7. Add the carrots, potatoes, and bell pepper, then simmer for another 30 to 40 minutes until the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot with a dollop of sour cream.

Tips

  • Use high quality Hungarian paprika for the most authentic flavor.
  • Browning the beef in batches prevents overcrowding and ensures a good sear.
  • For an easier option, use a slow cooker on low for 7 to 8 hours after browning the meat.

Variations

  • Add a splash of red wine for extra depth.
  • Use pork instead of beef for a different take on the classic.
  • Add dumplings instead of potatoes for a Czech inspired version.
