Hearty cottage French onion dip recipe

French onion dip is a classic party staple, and this cottage cheese version is so good that it genuinely replaces the sour cream original in every way. The foundation of this dip is deeply caramelized onions, which take patience to make but reward you with an intensely sweet, savory, almost jammy flavor that no shortcut can replicate. Blended cottage cheese provides the creamy base, and worcestershire sauce, garlic powder, and fresh chives round out the flavor into something that is rich, complex, and completely addictive. Chill it for at least an hour before serving to let the flavors fully develop and deepen.

Ingredients

  • 1.5 cups full fat cottage cheese
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons fresh chives, chopped
  • Salt and black pepper to taste

Directions

  1. Heat butter and olive oil in a large skillet over medium low heat.
  2. Add sliced onions and a pinch of salt. Stir to coat.
  3. Cook onions low and slow, stirring every 5 to 10 minutes, for 40 to 50 minutes until deeply golden, sweet, and caramelized.
  4. Remove from heat and let cool completely.
  5. Blend cottage cheese in a high speed blender until completely smooth, about 60 seconds.
  6. Transfer to a bowl.
  7. Stir in cooled caramelized onions, worcestershire sauce, garlic powder, smoked paprika, and chives.
  8. Season with salt and black pepper to taste.
  9. Refrigerate for at least 1 hour before serving.
  10. Serve with potato chips, crackers, or raw vegetables.

Tips and variations

  • Do not rush the caramelized onions. Low and slow is the only way to develop their deep, sweet flavor. High heat will only brown them without caramelizing.
  • Add a splash of balsamic vinegar to the onions in the last 5 minutes of cooking for extra depth and sweetness.
  • Stir in a tablespoon of cream cheese for an even richer, denser dip.
  • Add a teaspoon of fresh thyme leaves to the onions while they cook for an herbal variation.
  • This dip also works beautifully as a spread on burgers, sandwiches, or wraps.
  • Keeps in the refrigerator for up to 5 days. The flavor improves significantly overnight.
