Hearty cottage pancakes recipe

A stack of fluffy pancakes topped with fresh raspberries, blueberries, and a dollop of cream, served on a plate with a drizzle of syrup.

These cottage cheese pancakes have earned a devoted following for good reason. They are fluffy, golden, and satisfying in a way that traditional pancakes simply cannot match. Blending the cottage cheese with eggs, oats, and vanilla creates a smooth, pourable batter that cooks up beautifully on a griddle. The cottage cheese melts into the batter during blending, adding moisture and protein without any detectable dairy flavor. The result is a pancake that holds together perfectly, has a tender crumb, and pairs wonderfully with fresh berries, maple syrup, or a dollop of Greek yogurt. These are a weekend breakfast worth waking up for.

Ingredients

  • 1 cup full fat cottage cheese
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Butter or coconut oil for the griddle

Directions

  1. Add cottage cheese, eggs, oats, vanilla, honey, baking powder, and salt to a blender.
  2. Blend on high for 45 to 60 seconds until completely smooth.
  3. Let batter rest for 5 minutes while the griddle heats to medium.
  4. Lightly butter the griddle or pan.
  5. Pour approximately 1/4 cup of batter per pancake onto the griddle.
  6. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
  7. Flip carefully and cook for another 1 to 2 minutes until golden brown.
  8. Serve immediately with fresh berries, maple syrup, or yogurt.

Tips and variations

  • These pancakes are slightly more delicate than traditional flour pancakes. Use a thin spatula and flip gently.
  • For a thicker pancake, add 2 tablespoons of almond flour or all purpose flour to the batter.
  • Add a teaspoon of cinnamon and a pinch of cardamom for a warm spiced variation.
  • Fold fresh blueberries or chocolate chips into the batter after blending for added flavor.
  • Leftover batter keeps in the refrigerator for up to 24 hours. Stir before using.
  • These freeze well. Stack cooled pancakes between parchment paper and freeze for up to one month.
