Ingredients
- 3 very ripe bananas, mashed
- 1 cup full fat cottage cheese
- 2 large eggs
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1.5 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped walnuts or chocolate chips
Directions
- Preheat oven to 350 degrees F.
- Grease a 9×5 inch loaf pan and line with parchment paper.
- Add cottage cheese, bananas, eggs, honey, and vanilla to a blender.
- Blend on high for 45 seconds until smooth and well combined.
- In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
- Pour the blended wet ingredients into the dry ingredients.
- Fold gently until just combined. Do not overmix.
- Fold in walnuts or chocolate chips if using.
- Pour batter into the prepared loaf pan.
- Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Tips and variations
- Freeze overripe bananas in their peels and thaw when ready to bake. They become extra sweet and soft.
- Do not overmix the batter after combining wet and dry ingredients. Overmixing develops gluten and creates a dense loaf.
- Add a tablespoon of peanut butter to the blender for a peanut butter banana bread variation.
