Ingredients
- 6 to 8 fresh banana peppers, sliced into rings
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon kosher salt
- 1 tablespoon granulated sugar
- 3 cloves garlic, smashed
- 1 teaspoon black peppercorns
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon celery seed
Directions
- Wash and slice banana peppers into 1/4 inch rings, discarding stems and seeds if desired.
- Pack the pepper rings tightly into a clean quart-sized mason jar along with the smashed garlic cloves.
- Combine vinegar, water, salt, and sugar in a small saucepan over medium heat.
- Stir until salt and sugar are fully dissolved, then bring to a gentle boil.
- Add peppercorns, mustard seeds, and celery seed to the jar.
- Pour the hot brine over the peppers, leaving about 1/2 inch of headspace.
- Tap the jar gently on the counter to release any air bubbles.
- Allow the jar to cool to room temperature, then seal and refrigerate.
- Let the peppers pickle for at least 24 hours before eating for best flavor.
- Store in the refrigerator for up to one month.

- For sweeter pickles, increase sugar to 2 tablespoons
