Hearty fresh herb preservation spray formula

Fresh herbs are one of the most perishable items in the kitchen, and keeping them fresh for as long as possible saves money and reduces waste. This simple spray uses distilled water with a tiny amount of citric acid, which acts as a natural preservative and antioxidant, to keep herbs hydrated and slow the browning and wilting process. Stored properly in the refrigerator with regular misting, fresh herbs can last up to two weeks.

Ingredients

  • 4 oz distilled water
  • 1 pinch food grade citric acid powder (optional, available in canning sections)

Directions

  1. Fill a clean 4 oz glass spray bottle with distilled water.
  2. Add citric acid if using and shake gently to dissolve.
  3. Wrap fresh herbs loosely in a slightly damp paper towel.
  4. Place in an open container or bag in the refrigerator.
  5. Mist herbs lightly every 1 to 2 days to keep them hydrated.
  6. For hardier herbs like rosemary and thyme, store upright in a small jar with an inch of water and mist the tops.

Tips and variations

  • Basil is the exception and should be stored at room temperature, not refrigerated
  • Mist herbs just before using to revive any slight wilting
  • Works beautifully for keeping salad greens crisp in the refrigerator
  • Can also be used to mist fresh flowers in a vase to extend their life
  • Use within 1 week for best freshness
