Hearty cottage flatbread recipe

This two ingredient cottage cheese flatbread has taken the internet by storm for very good reason. It is naturally gluten free, incredibly high in protein, and endlessly versatile. Blending cottage cheese with eggs and a few seasonings creates a smooth batter that bakes into a flexible, golden flatbread with a slightly chewy texture. It holds up to toppings beautifully, making it perfect as a pizza base, a wrap, or a standalone snack. It takes about five minutes to prepare and twenty minutes to bake, which means a protein-rich flatbread is always within reach on a busy weeknight.

Ingredients

  • 1 cup full fat cottage cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. Line a baking sheet with parchment paper and lightly spray with cooking spray.
  3. Add cottage cheese, eggs, garlic powder, Italian seasoning, salt, and pepper to a blender.
  4. Blend on high for 60 seconds until completely smooth.
  5. Pour batter onto the prepared baking sheet and spread into an even rectangle or oval, about 1/4 inch thick. it doesn’t need to go to the edges, start pouring from the middle of the pan.
  6. Bake for 25 to 30 minutes until the edges are golden and the center is fully set and no longer jiggly.
  7. Let cool for 5 minutes before adding toppings or slicing.
  8. Use immediately as a pizza base, wrap, or snack flatbread.

Tips and variations

  • Do not make the batter too thick or the center will not cook through properly. Aim for an even 1/4 inch spread.
  • Add a tablespoon of nutritional yeast to the batter for a cheesy, savory flavor boost.
  • Top with marinara, mozzarella, and fresh basil for a quick protein pizza.
  • Sprinkle everything bagel seasoning over the batter before baking for extra flavor.
  • For a sweet version, add a teaspoon of cinnamon and a tablespoon of honey to the batter and top with fresh fruit.
  • Leftovers keep in the refrigerator for up to 3 days. Reheat in a dry skillet or toaster oven for best texture.
  • Recipe makes 1 fairly large single use flatbread. Separating into more spread out on the pan works also but will reduce cook time a bit.
