This rhubarb dream dessert is a spin-off of a beloved Midwestern classic. It earns its dreamy name through a brilliant contrast of textures and flavors. A buttery, shortbread-style crust provides a rich, crumbly foundation that cradles a tart, jammy rhubarb filling cooked to silky perfection. The crowning layer is a cloud of sweetened cream cheese and whipped topping, impossibly light and cool against the warm tang of rhubarb beneath it. Each bite delivers sweet, tart, creamy, and buttery all at once. It pairs beautifully with a cup of black coffee or a light dessert wine, and is best served chilled in generous squares.
Ingredients
Crust
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup (1 stick) cold butter, cut into pieces
Rhubarb Layer
- 4 cups fresh rhubarb, chopped into 1/2-inch pieces
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 cup water
- 1/2 teaspoon vanilla extract
Dream Layer
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 oz whipped topping (Cool Whip), thawed
Directions
- Preheat your oven to 350 degrees F.
- In a food processor or by hand, combine flour, powdered sugar, and cold butter until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of a greased 9×13-inch baking dish.
- Bake the crust for 15 to 18 minutes until lightly golden. Remove and let cool completely.
- While the crust bakes, combine rhubarb, granulated sugar, cornstarch, and water in a medium saucepan over medium heat.
- Cook the rhubarb mixture, stirring frequently, for 10 to 15 minutes until the rhubarb breaks down and the mixture thickens to a jam-like consistency.
- Stir in vanilla extract and food coloring if using. Remove from heat and let cool completely to room temperature.
- Spread the cooled rhubarb layer evenly over the cooled crust.
- In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
- Add powdered sugar and vanilla extract to the cream cheese and beat until fully combined and creamy.
- Gently fold the whipped topping into the cream cheese mixture until smooth and well blended.
- Spread the dream layer evenly over the rhubarb layer.
- Cover and refrigerate for at least 4 hours or overnight before serving.
- Cut into squares and serve cold.
Tips and variations
- The crust and rhubarb layers must be fully cooled before adding the dream layer or it will melt and weep
- Fresh rhubarb from your garden gives the best flavor and color
- If your rhubarb is very tart, increase sugar by 2 to 3 tablespoons to taste
- Frozen rhubarb works well, just thaw and drain excess liquid before cooking
- Add 1 cup of sliced fresh strawberries to the rhubarb layer for a classic strawberry-rhubarb version
- A sprinkle of crushed graham crackers or toasted pecans on top of the dream layer adds a nice crunch
- For a more stable topping, substitute stabilized whipped cream for the Cool Whip
- This dessert keeps well covered in the refrigerator for up to 4 days
- Serves 12 to 15 people, making it ideal for potlucks and gatherings
