Mexican Stroganoff

This fusion dish takes the creamy comfort of classic beef stroganoff and infuses it with bold Mexican flavors like cumin, chili, and lime. Ingredients

  • 2 lbs round steak, sliced thin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chili sauce
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper,
  • sliced 1 jalapeño, seeded and minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 8 oz. carton of sour cream
  • 1 tablespoon lime juice
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste

For serving: Cooked egg noodles, rice, or warm tortillas Extra cilantro for garnish Lime wedges

Directions

  1. Season the sliced beef with salt, pepper, chili powder, and smoked paprika. Toss to coat evenly.
  2. Heat 1 tablespoon olive oil in a large skillet over medium high heat.
  3. Add the beef in batches to avoid overcrowding and sear for 2 to 3 minutes until browned.
  4. Remove and set aside.
  5. Add the remaining tablespoon of oil to the same skillet.
  6. Sauté the onion and bell pepper for 4 to 5 minutes until softened.
  7. Add the garlic, jalapeño, and mushrooms.
  8. Cook for another 3 to 4 minutes until the mushrooms release their moisture and begin to brown.
  9. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
  10. Pour in the beef broth and bring to a simmer. Let it cook for 3 to 4 minutes to reduce slightly.
  11. Lower the heat to medium low. Stir in the sour cream and lime juice until the sauce is smooth and creamy.
  12. Return the beef to the skillet along with any accumulated juices. Stir to combine and heat through for 2 to 3 minutes.
  13. Remove from heat and stir in the fresh cilantro. Taste and adjust seasoning with salt and pepper.
  14. Serve over egg noodles, rice, or with warm tortillas. Garnish with extra cilantro and lime wedges.

Tips

  • For a spicier version, leave some seeds in the jalapeño or add a pinch of cayenne pepper.
  • You can substitute ground beef or chicken for a different take on this dish.
  • If the sauce is too thick, thin it with a splash of broth or milk.
  • Leftovers reheat beautifully and the flavors deepen overnight.
