Ingredients
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- 3/4 cup warm water
- 3 tablespoons lard, shortening, or neutral oil (such as avocado or vegetable)
Directions
- Whisk the flour and salt together in a large mixing bowl.
- Add the fat and use your fingers or a fork to work it into the flour until the mixture resembles coarse crumbs.
- Pour in the warm water gradually, stirring until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 2 to 3 minutes until smooth and soft.
- Divide the dough into 8 equal balls, cover with a clean kitchen towel, and let rest for 30 minutes at room temperature.
- Heat a dry cast iron skillet or griddle over medium-high heat.
- On a lightly floured surface, roll each ball into a thin round, about 8 inches in diameter.
- Cook each tortilla for 45 to 60 seconds per side, until small brown spots appear and the surface looks dry and slightly puffed.
- Transfer to a clean towel and fold over to keep warm and pliable while you cook the rest.
Variations
Each variation uses the base recipe above. Add the ingredients listed into the flour and salt mixture before adding the fat and water. Reduce water by 1 to 2 tablespoons when adding wet ingredients like purees.
