Directions
- In a large mixing bowl, whisk together the rice flour, tapioca starch, potato starch, xanthan gum, salt, sugar, and yeast until evenly combined.
- Add the warm water, olive oil, and apple cider vinegar to the dry ingredients. Mix with a sturdy spoon or a hand mixer on medium speed for about 2 minutes until a thick, sticky dough forms. It will not look or behave like traditional wheat dough. That is expected.
- Let the dough rest uncovered for 10 minutes so the yeast can activate and the starches can hydrate.
- Preheat your oven to 425 degrees F. Lightly oil a 12-inch pizza pan or a rimmed baking sheet and dust lightly with rice flour or tapioca starch.
- Transfer the dough to the prepared pan. Using oiled hands or an oiled offset spatula, press and spread the dough into a round about 12 inches in diameter with a slightly raised edge.
- Par-bake the plain crust for 12 to 14 minutes until it is set, dry to the touch, and just beginning to turn golden at the edges.
- Remove from the oven and add your sauce, cheese, and toppings.

- Leftovers reheat best in a dry skillet over medium heat for 3 to 4 minutes rather than in the microwave or if you have in air fryer that is a good way to reheat pizza slices also
