Nourishing and highly customizable.

This soul-warming soup is a staple of Chinese and Korean home cooking, beloved for its clean, nourishing simplicity and deeply comforting flavors. The napa cabbage becomes meltingly tender as it simmers, releasing its natural sweetness into a savory broth enriched with ginger, garlic, and a touch of sesame oil. Silky tofu adds protein and a soft, custard-like texture, while shiitake mushrooms bring earthy depth and umami richness. Glass noodles soak up the flavorful broth, making each spoonful satisfying and complete. This is the kind of soup that feels like a warm hug, perfect for cold evenings, when you’re feeling under the weather, or anytime you crave something light yet deeply nourishing. Serve it in deep bowls with a side of steamed rice and kimchi or enjoy it as a standalone meal with crusty bread for dipping into the aromatic broth.

Directions
Build the broth: In a large pot, combine broth, water, garlic, ginger, soy sauce, sesame oil, and white pepper. Bring to a boil, then reduce to a simmer for 10 minutes to let the flavors meld.
Add vegetables: Add the napa cabbage stems first (they take longer to cook), along with carrots and mushrooms. Simmer for 5 minutes until vegetables begin to soften.
Add cabbage leaves: Add the leafy parts of the napa cabbage and continue simmering for another 5-7 minutes until tender.
Add protein and noodles: Add tofu cubes and drained glass noodles if using. If using meat, add thinly sliced pork or chicken now and cook until just done, about 3-4 minutes.
Final touches: Taste and adjust seasoning with salt, soy sauce, or white pepper. If making egg drop style, slowly drizzle beaten egg into the simmering soup while stirring gently.
Finish: Remove ginger slices. Stir in green onions and turn off heat.
Serve: Ladle into bowls and garnish with cilantro, a drizzle of sesame oil, and chili oil if desired. Serve hot with rice or enjoy on its own.
Tips
- For deeper flavor: Toast the ginger and garlic in a bit of oil before adding the broth
- Make it heartier: Add dumplings, wontons, or rice cakes
- Vegetarian version: Use vegetable broth and add dried shiitake for umami depth
- Meal prep friendly: The soup keeps well for 3-4 days in the fridge. Store noodles separately if possible to prevent them from absorbing too much liquid
- Korean twist: Add a spoonful of gochujang (Korean chili paste) and doenjang (soybean paste) for a spicier, more robust flavor
- Chinese variation: Add a splash of Shaoxing wine and use pork bone broth for richer depth
Variations
- Spicy Korean Version: Add 1-2 tbsp gochugaru, 1 tbsp gochujang, and use anchovy-kelp broth
- Miso Version: Stir in 2-3 tbsp white or red miso paste at the end for Japanese-inspired flavor
- Pork Belly Version: Brown pork belly pieces first, then build the soup in the rendered fat for extra richness
